His masterly and elegant approach to the study of enzyme systems concerned in the breakdown of starch has led to the isolation, from several sources, of a phosphorylase which reversibly catalyses the conversion of glucose-I-phosphate to starch and mineral phosphate. His work, culminating in the first synthesis of starch 'in vitro', has profoundly influenced the trend of investigation in related fields. He has revealed the mechanism of the biological synthesis of starch from glucose, a result of outstanding importance in chemistry and in the elucidation of the carbohydrate metabolism of plants.
