Remarks that a more experienced and responsible man should be sent than they seem to have been sending lately. Some waste has occurred through bottles being opened unnecessarily, and Harrison looks to Savigar to provide responsibility, as the housekeeper cannot exercise constant supervision over everyone at the table.
