Thinks there has been a misunderstanding in the term 'malting' -- does not intend to sprout the chestnuts, but to treat chestnut mash with malt, and so the fermentation method should have no influence on the storage question. Will investigate whether heating the chestnuts has any effect, if Hardy will send some samples.
