Citation | Distinguished for studies of metabolic changes throughout the development of apples and barley grains, for which precise analytical methods were developed. She was the first to isolate fructosan from leaves and to show it to consist of mixed fructose polymers all with some aldose. She demonstrated that the starch of cereal grains is photosynthesised in the ear. A close study has been made of the mutual inhibitions of phosphorylase and amylase to account for the varying relations of sucrose starch and fructosan in barley. Present work is concerned with the direct study of starch synthesis in vivo by the use of labelled sugars |
