DescriptionNotes that glucose is sold in both liquid and solid form, from starch, water and a small percentage of acid -- liquid glucose is used in jam-making and confectionary to prevent crystallisation of cane sugar -- solid glucose is used in brewing -- gives present market prices and a compositional analysis of liquid and two types of sold glucose.
