DescriptionGoddard presents observations on fresh and stale eggs from hens (Gallus domesticus). He explains how stale eggs can be identified by a 'mealinesse' of their shells, the appearance of an irregular 'cavity between the shell and the membrane', the colour and consistency of the albumen, and the position of the egg yolk within the shell.
