CitationHis outstanding discoveries have resulted from metabolic studies of human beings. He discovered that iron was never excreted in more than traces and first suggested that the amount absorbed must vary with the need of the body. He detected that brown bread inhibited the absorption of calcium and iron, and that the interfering substance was phytic acid. He first produced and studied experimentally the syndrome of salt deficiency. He showed that the kidney does not function in infancy as it does in adult life and is a relatively inefficient organ. He has worked extensively on the composition of foods.
